CANADIAN CHEESE SOUP 
1 lg. potato, diced
1 lg. onion, chopped
1/4 c. carrot, finely diced
1/4 c. celery, finely diced
1 c. water
2 c. consomme or chicken broth
1 c. grated cheddar cheese
2 c. milk
1 c. cream
Seasoning to taste i.e. salt, pepper, Lawry's, celery salt, Mrs. Dash, etc.

More milk or water may be added. Combine vegetables in large soup kettle with broth and water and simmer until tender. Combine milk and cheese. Mix well and simmer.
