BREAD-SOUR DOUGH | |
3/4 c. starter 1/2 c. flour 2 pkgs. yeast 2 c. flour 3 tbsp. sugar 1 tbsp. salt 2 tbsp. vegetable oil TO FEED STARTER.......Mix 3/4 cup boiling water with 2 tablespoons instant potatoes and 1/3 cup sugar. Let stand until cool. Mix with starter. Let stand unrefrigerated for 8 to 10 hours. At this time you are ready to make SOUR DOUGH BREAD. To make SOUR DOUGH BREAD.......Take 3/4 cup starter (return the rest of your starter to refrigerator). Mix with 1/2 cup of flour, let stand while mixing 2 packages yeast, 2 cups flour, 3 tablespoons flour, 1 tablespoons salt, 2 tablespoons vegetable oil. Mix well. Add 1 3/4 cups warm water, mix well. Add starter mixture, add enough flour to make stiff batter. Turn on floured surface, knead 8 to 10 minutes. Place in greased bowl - turn dough over once - cover and let stand in warm place until doubled in size about 1 hour. Punch down - knead just enough to get bubbles out. Divide into 2 or 3 portions. Shape and divide. Place into greased loaf pans and cover. Let stand until double, about 1 hour. Bake at 350 F. 25 to 30 minutes. Use Pillsbury bromate bread flour or 1 cup plain flour and 1 cup quick oats (2 cups plain flour or 2 cups wheat flour or 2 cups rye flour). Oil tops of loaves with vegetable oil before placing in oven. |
