SOUR DOUGH STARTER BREAD | |
NOTE: Starter used in this recipe can be gotten from Mrs. Helen. Start preparations for making bread either at night or in the morning. You must regulate the liquid starter every 3-7 days, as follows: STEP #1: Remove jar of starter from refrigerator and ("feed") add: 3 tbsp. instant potato flakes 1 c. warm water Mix well and let stand out of refrigerator all day/night (12 hours). Remove one cup of liquid starter for making bread and return the rest to refrigerator for next time. Keep your starter jar loosely covered, as it may explode if tightly capped. A few holes in the jar lid will do fine. If you are not going to make bread with the starter, throw away or give away some, but keep one cup liquid for bread. STEP #2: Start bread (either night or morning), after 12 hours and Step #1. Place 1 cup of starter in a very large bowl and add: 1/2 c. corn oil 1 tsp. salt 1 1/2 c. warm water 6 c. bread flour (specifically for bread-making) For wheat bread use: 2 c. whole wheat flour 1/4 c. honey (optional) Mix with wooden spoon into a stiff dough. Divide the dough into three or four lumps. Place them in a large, greased container. (I use the same bowl and spray some "PAM" around the sides of the bowl.) Lightly pat (with two fingers) several drops of corn oil onto top of the dough. Cover the bowl with a loose-fitting lid or plastic wrap. Leave out 12 hours (all night or day). HINT: Don't use too much oil -- dough won't rise properly. HINT: Keep your kitchen warm so dough will rise high. STEP 3: After 12 hours, "punch down" the bowl of dough (lets the air out), and knead each lump for a few minutes. Put each lump in a loaf pan (I spray with "PAM"), and let it rise again for 12 hours (all day or all night). Pat a few more drops of oil on top of each loaf and cover lightly with plastic wrap. Place pans in a warm area to rise. STEP 4: After 12 more hours, bread should have risen in loaf pans and be ready for baking. Preheat oven to 350 degrees and bake for 30 minutes until golden brown. It's best to cool for about 15 minutes to make slicing easier. Enjoy!!! |
