PEPPER CHEESE TOMATOES | |
2 med. tomatoes, sliced 1/2-inch thick 4 oz. pepper cheese, sliced 1/4-inch thick 2 tbsp. sliced pitted ripe olives 1 tbsp. sliced green onion In a broiler-proof shallow dish or pie plate, place tomato slices, overlapping slightly, if necessary. Broil 5 inches from heat for 3-4 minutes. Remove from broiler; top tomato slices with cheese slices. Sprinkle with olives and green onion. Place under broiler for 2 minutes more or until cheese is melted. Serves 4. |
