MINI CHEESECAKE CUPS 
2 pkgs. cream cheese
2 eggs
1 tsp. vanilla
3/4 c. sugar
1 tbsp. lemon juice
1 box vanilla wafers
1 can pie filling (any flavor)

Beat cream cheese until smooth; add eggs, vanilla, sugar and lemon juice. Line mini cupcake pans with paper and place one vanilla wafer on the bottom of each cup. Fill with cream cheese mixture 2/3 and add a teaspoon of pie filling on top. Bake at 375 degrees for 15 to 20 minutes.
