MINI CHEESECAKE CUPS 
24 cupcake papers
24 vanilla wafers
2 (8 oz.) pkgs. cream cheese
3/4 c. sugar
2 eggs
1 tsp. vanilla
2 tbsp. lemon juice

Beat until creamy. Fill cups 2/3 full. Bake at 375 degrees for 15 minutes. Cool. Top with pie filling. Makes 24.
