BREAKFAST CASSEROLE 
1 lb. pork sausage, cooked
1 green pepper, chopped
6 eggs, well beaten
30 crushed saltines
1/2 c. onion, chopped
3 c. milk
2 c. grated cheddar cheese

Mix all together, reserving some cheese. Pour into greased 13x9 pan; top with reserved cheese and bake 1 hour at 350 degrees. Let stand 15 minutes before serving. HINT: May be prepared night before; cover with foil and refrigerate until morning, then bake.
