BREAKFAST CASSEROLE 
6 slices bread
Non-stick spray
1/2 lb. ground turkey sausage
1 med. green pepper, chopped
1/2 c. mushrooms, chopped
4 oz. shredded Cheddar cheese
1 can cream of mushroom soup
1 (8 oz.) carton frozen egg product
1 c. evaporated milk
1/2 tsp. pepper

Cut bread into cubes, place in large shallow pan. Bake at 350 for 8 to 10 minutes. Spray 12 x 7 x 2 inch dish place 1/2 cubes in dish.

In a skillet, brown the sausage, peppers and mushrooms until brown. Drain grease. Spoon over bread cubes, sprinkle 1/2 cheese, top with rest of bread cubes. In bowl combine soup, egg, milk and pepper. Pour over bread and press into cubes. Cover and chill for 2 to 24 hours.

Bake at 350 degrees for 30 minutes or until knife comes out clean. Top with remaining cheese and melt.
