GREEN CHILI AND CHEESE BREAKFAST
CASSEROLE
 
1-2 c. diced ham or sausage, cooked
2 cans green chili, drained and chopped (Use a handful of fresh if desired)
1 lb. grated Jack cheese
1 lb. grated Longhorn cheese
4 eggs, separated
Sm. can evaporated milk
1 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
2 sliced tomatoes (optional)

Combine grated cheese, chili, and ham or sausage. Turn into a well-buttered, shallow casserole. Beat egg whites until stiff peaks form.

In a separate bowl, combine egg yolks, milk, flour, salt, and pepper. Mix until well blended. Gently fold egg whites into egg yolk mixture; pour egg mixture over cheese in casserole. Use a fork to poke and "ooze" it through the cheese.

Bake at 325 degrees for 30 minutes. Arrange sliced tomatoes around edge and bake 30 minutes longer.
