SPANISH EGGPLANT 
1 eggplant
1/2 c. minced onion
1/2 c. minced green pepper
1/2 c. bacon drippings
1 can tomatoes
2 tbsp. sugar
1 1/2 tsp. salt
Parmesan cheese

Pare and slice eggplant. Soak onions, pepper and eggplant in oil for 10 minutes. Add tomatoes, salt, sugar. Cook 5-10 minutes. Pour in casserole dish, cover with cheese and bread crumbs. Bake about 20 minutes.
