COOKIE CUTTER COOKIES 
1 c. (2 sticks) butter, at room temperature
1/2 c. sugar
2 1/2 c. flour
1 tsp. almond or lemon extract (if desired)
Confectioner's sugar glaze

In large bowl of mixer or food processor cream together butter and sugar. Blend in flour. When dough is well mixed, pat into ball and refrigerate for 2 hours. When ready to make cookies heat oven to 300 degrees. Roll cookies on floured board or between sheets of waxed paper dusted with flour, to about 1/4 inch thickness. Cut with cutters dusted in flour. Place on ungreased cookie sheet. Re-roll dough until all is used. Bake 20-25 minutes. Decorate with frosting and sprinkles as desired. The absolutely BEST rolled cookie for children to cut into shapes.
