GINGERBREAD COOKIES 
1 c. butter, softened
1 c. light brown sugar
1/2 c. honey
3 1/2 c. flour, sifted
2 tsp. ginger
1 tsp. cinnamon
1 tsp. baking soda
Dash of salt
1 tsp. butter to grease the cookie sheet
Optional:
Raisins
Walnuts
Cake Icing

You will also need: Electric mixer, cookie cutters, spatula, rolling pin, cookie sheet.

1. Put all the ingredients, except the extra tablespoon of butter, the raisins, the nuts and the icing in a large mixing bowl.

2. Use an electric mixer on medium speed. Mix the ingredients until they are well combined.

3. Chill the dough in the refrigerator for 1 hour.

4. After you have taken the dough out of the refrigerator, preheat your oven to 350 degrees.

5. Put the dough on the board that is lightly covered with flour.

6. Use a rolling pin to roll out the dough until it is 1/8 if an inch thick.

7. Use a cookie cutter to cut the dough in shapes.

8. Grease your cookie sheet with an extra tablespoon of butter.

9. Use a spatula to move your gingerbread cookies into the greased cookie sheet.

10. Decorate your cookies with the raisins and walnuts.

11. Bake the cookies for 8-10 minutes.

12. When the cookies have cooled, decorate them with cake icing.

We made a half of the recipe and they turned out great! We didn't have any ginger and substituted nutmeg a dash of paprika, and more cinnamon and they still turned out pretty tasty. Perfect for making into shapes, we had no issues with the dough being sticky or dry, it turned out just right. Thanks!

Recipe was great, but left out eggs. I added 3 of them and an additional 1/2 tsp of baking powder. You can also use only 2 eggs and one yolk for extra density. Cookies turned out wonderful and were soft and fluffy.
