COUNTRY HAM 
15 to 20 lbs. ham

Soak country ham for 24 to 36 hours. Place ham in roaster containing 2 quarts cold water. Put in cold oven and turn thermostat to 500 degrees. When it gets to 500 degrees begin counting time. Cook for 30 minutes. Turn oven off for 3 hours. Then turn oven back on to 500 degrees and cook for 30 more minutes. Turn oven off and let stay in oven overnight. Do not open oven door at anytime.

Next morning, take out and remove skin. Pepper and glaze with brown sugar, molasses, pineapple or your choice of glazes. Run back into the oven for a few minutes to set glaze.
