BEEF CABELLERO 
1 1/2 lb. beef steak, cut in 1/8 inch strips
1 tbsp. paprika
2 cloves garlic, crushed
2 tbsp. butter
1 c. sliced green onion tops
2 green peppers, cut in strips
2 lg. fresh tomatoes, diced
1 c. beef broth
1/4 c. water
2 tbsp. cornstarch
2 tbsp. soy sauce
3 c. hot cooked rice

Sprinkle steak with paprika and allow to stand while preparing other ingredients. Cook steak and garlic in butter until meat is brown. Add onions, peppers, tomatoes, and broth. Cover and simmer 15 minutes. Blend water with cornstarch and soy sauce. Stir into steak and cook until thickened. Serve on bed of rice. Serves 6.
