MEAT LOAF 
2 lbs. ground beef
2 eggs
1 c. dry bread crumbs
2 tsp. salt
1/8 tsp. black pepper
1/2 c. grated carrot
1/4 c. minced onion
3/4 c. milk

TOPPING:

1/4 c. catsup
2 tsp. prepared mustard
3 tbsp. brown sugar

Beat eggs; add remaining ingredients and mix well. Pack into 9"x5" loaf pan. Spread with topping and bake at 300 degrees for 1 1/2 hours. The low temperature helps to keep the meat loaf from shrinking and the top from burning. This may be frozen with good results before or after baking.
