MAMA FRANCES' BREAD PUDDING 
8 slices white bread (edge removed)
1 can evaporated milk (12 oz.)
2 1/2 c. homogenized milk
1 c. sugar
1 1/2 tbsp. vanilla flavor
2 packs fresh frozen coconut (6 oz. each)
3 egg yolks
6 tbsp. cornstarch
1/2 c. water

Dissolve cornstarch in 1/2 cup of water and set aside.

Using a double boiler over medium high heat, mix evaporated milk, homogenized milk, sugar, egg yolks and vanilla flavor in top boiler. Now add cornstarch mixture. Stir constantly until mixture starts to thicken.

In a 9x9 square dish, layer loaf slices, pour pudding over slices and sprinkle top with coconut. Repeat, makes 2 layers. Refrigerate at least 1 hour before serving.
