LENTILS AND SPINACH SOUP 
1 lg. onion, minced
3 cloves garlic, crushed
1 c. lentils, rinsed
1 bunch chopped spinach
6 c. water
1 tbsp. cumin powder
Dash salt
Dash pepper

Cook onion and garlic in oil until onion is tender. Add water and lentils. Add cumin, salt and pepper. Bring to a boil; simmer for 1 hour. Add spinach. Continue cooking for another 1/2 hour or until lentils are done.
