FROSTY LEMON COOLER 
1 c. crushed coconut bar cookies, 12-13 cookies
2 tbsp. butter, melted
2 egg yolks
1 tsp. grated lemon peel
1/3 c. lemon juice
2/3 c. sugar
Dash of salt
2 egg whites
2/3 c. non-fat dry milk powder
2/3 c. water

Combine cookie crumbs and butter. Sprinkle 3/4 of the crumbs in 9 x 9 x 2 inch baking pan. Stir together egg yolks and lemon peel and juice. Add sugar and salt; mix well.

In large bowl, combine egg whites, dry milk powder, and water. Beat at high speed of electric mixer to stiff peaks, about 5 minutes. Add egg yolk mixture, beating at low speed just until blended. Pour over crumbs in pan. Top with remaining crumbs. Freeze. Before cutting, dip bottom of pan in warm water for 10 seconds. Cut into squares. Makes 12 servings.
