POTATO PANCAKES 
1 egg, slightly beaten
1 sm. or med. potato per person
Chopped onion to taste, optional
1 heaping tbsp. flour per 2 potatoes
Salt & pepper to taste
Grated cheese, optional

Peel and grate potatoes. Add to beaten egg, stir in flour, onion, salt and pepper and grated cheese; mix well. Fry. (I like to use almost as much grated cheese as grated potato.)
