FUDGE MINT CHEESECAKE BARS 
4 oz. unsweetened baking chocolate
10 tbsp. butter
2 c. sugar
4 eggs
2 tsp. vanilla
1 c. flour
1 (8 oz.) pkg. cream cheese, softened
1 tbsp. cornstarch
1 (14 oz.) Eagle Brand milk
1 tsp. peppermint flavoring
Green food coloring, optional

Preheat oven to 350 degrees F. Melt chocolate with 1/2 cup butter. In bowl combine chocolate mixture with sugar. Add eggs, vanilla and flour. Spread in greased 9x13 pan and bake 12 minutes.

With electric mixer, beat cheese, 2 tablespoons butter and cornstarch until fluffy. Add Eagle Brand milk then remainder of ingredients. Pour over brownie layer and bake 30 minutes until done.

In separate bowl, melt 1 cup (6 ounce) semi-sweet chocolate chips with 1/2 cup whipped cream, un-whipped. Cook and stir until thickened. Pour over brownies and cool.
