SOUTHWESTERN LENTILS 
1 c. lentils
1 tbsp. vegetable oil
1 c. chopped onion
1 clove garlic, minced
28 oz. can tomatoes, chopped
4 oz. can chopped green chilies
2 1/4 oz. can sliced olives, drained
1 tsp. ground cumin
1/2 tsp. salt
Freshly ground pepper to taste
1 1/2 c. Jack or cheddar cheese, grated

1. Bring medium pan of water to boil, add lentils and simmer 25 minutes; drain.

2. In large skillet heat oil; add onion and garlic; saute 5 minutes. Add tomatoes, olives, chilies and spices. Simmer 10 minutes.

3. Combine lentils and tomato mixture. Spoon into baking dish and sprinkle with cheese. Heat in a 350 degree oven for about 20 minutes, until cheese melts and lentils start to bubble.

4. Let sit 5 minutes before serving. Serves 4 to 6.
