SNOW PIE 
1 1/2 c. sugar
3 tbsp. cornstarch
1 tbsp. butter
1 c. boiling milk or water
1 tsp. lemon extract
2 egg whites, beaten stiff
1 egg white, for meringue
3 tsp. sugar

Mix sugar and cornstarch. Add butter and boiling water or milk. Cook until thick, stirring constantly.

Remove from fire and add extract slowly and allow to cool while you beat the whites of 2 eggs. Add to the cooked mixture and pour into a baked pie shell. Make meringue and cover pie with it. (This was my favorite when I was a kid.)
