CHERRY NUT SNOW CAKE 
2 1/4 c. sifted cake flour
3 1/4 tsp. baking powder
1 tsp. salt
1/2 c. shortening
1 1/2 c. sugar
1 c. milk
1 1/2 tsp. vanilla
1/4 tsp. almond extract
4 egg whites (unbeaten)
3/4 c. chopped nuts
2 tbsp. maraschino cherries (chopped finely)

Measure flour, baking powder, salt and sugar. Stir shortening just to soften. Sift in dry ingredients. Add 3/4 cup milk and flavorings. Mix until all flour is dampened. Beat 2 minutes at low speed. Add egg whites and remaining milk and beat 1 minute. Mix in nuts and cherries.

Pour batter in 2 (8 or 9 inch) round pans or a 9x13 pan lined with wax paper. Bake 350 degrees for 25 to 30 minutes. Cool. Frost with seven minute icing and top with cherries if desired.
