STEAMED SALMON WITH LEMON AND
OLIVE OIL
 
Dressing:

2 tbsp. lemon zest, blanched
2 tbsp. lemon juice
salt and pepper. to taste (tt)
4 tbsp. Extra Virgin olive oil
16 fl. oz. white wine
1 Bay leaf
4 oz. leek, chopped
a sprig of fresh thyme
2 tsp. peppercorns, crushed
2 (6 oz.) salmon tranche or steaks

To make dressing, combine lemon zest, lemon juice, salt, and pepper. Whisk in oil.

Combine the wine, bay leaf, leek, thyme, and peppercorns in the bottom of a steamer.

Season salmon with salt and pepper and place in steamer basket Cover steamer and bring liquid to a boil. Cook fish until done, approx 4-6 minutes.

Plate salmon, spoon dressing over top.

I made this today, as I am always looking for more interesting ways to use my steamer pot. I had never steamed anything in wine so I used a $5 bottle of Chardonnay and it came out delicious! I steamed broccoli in the wine steam before I steamed the salmon and that turned out great as well. Served it all on a bed of fetuccine w/low fat alfredo sauce and fresh grated parmesan over everything. Will definitely make again!
