CORN CHEESE MUFFINS 
1 c. plain flour
1 tsp. salt
2 1/2 tsp. baking powder
1/4 c. sugar
1 c. yellow cornmeal
2/3 c. grated American cheese
1 c. milk
1 egg, well beaten
2 tbsp. melted shortening

Sift together flour, salt, baking powder, and sugar. Add cornmeal and cheese. Combine milk, egg, and shortening. Add all at once to dry ingredients. Stir just until dry ingredients are moistened but not smooth. Batter should be lumpy. Fill greased muffin pans 2/3 full. Bake approximately 25 minutes in a 400 degree oven.
