CHEESE CORN MUFFINS 
1 c. yellow corn meal
1 c. flour
1/2 c. shredded Swiss cheese
1/2 c. shredded Cheddar cheese
1/4 c. sugar
2 tbsp. each minced red and green pepper
1 c. sour cream
2 eggs
1/4 c. melted butter

Mix together the sour cream, eggs, and melted butter. Add to the dry mix, mixing well. Pour into well greased muffin tin. Bake at 400 degrees until golden brown or until done. Good served with garlic spread or served with chili.
