CHEESE CORN MUFFIN 
1 c. yellow corn meal
1 c. flour
1/2 c. shredded white cheese
1/4 c. sugar
1/4 c. minced red and green pepper
2 tsp. baking powder
1 1/2 tsp. salt (optional)
1 1/2 c. sour cream
2 eggs
1/4 c. butter

Mix together and fill muffin cups. Bake at 400 degrees until golden brown. Cool 5 minutes.
