TWO BEAN RICE SALAD 
3 c. rice, cooked
1 (16 oz.) can vegetarian baked beans, drained & rinsed
1 1/2 c. carrots, shredded
1 1/2 c. green pepper or celery, chopped
1/2 c. Italian salad dressing
2 tbsp. green onion, chopped
1/4 tsp. pepper

Combine all ingredients and mix lightly. Chill 2 hours or overnight. Toss before serving. Serves 8 or more.
