MAX VARNEY'S TWO BEAN AND RICE SALAD | |
3 c. cold cooked rice 1 (15 oz.) can pinto beans, rinsed and drained 1 (15 oz.) can black beans, rinsed and drained 1 (10 oz.) pkg. frozen peas, thawed 1 med. red onion, chopped (1/2 c.) 2 (4 oz.) cans diced green chili peppers, drained 1/4 c. snipped cilantro or parsley 1 recipe garlic dressing or 1 (8 oz.) jar Italian salad dressing Combine ingredients in large bowl. Add dressing. DRESSING: In a screw-top jar, combine: 1/3 c. white wine vinegar 1/4 c. olive oil or salad oil 2 tbsp. water 3/4 tsp. salt 1/2 tsp. garlic powder 1/2 tsp. pepper Cover and shake well. |
