BEANS AND RICE SALAD 
1 can black beans
1/4 c. Italian salad dressing
1/4 tsp. pepper
3/4 c. long grain, uncooked
1/4 c. Italian dressing
Lettuce leaves
3/4 c. shredded Cheddar cheese
3 med. green onions
1 med. tomatoes, chopped
Sour cream, optional

Combine first 3 ingredients. Cover and chill at least 8 hours. Cook rice omitting salt. Rinse with cold water; drain. Combine rice and 1/4 cup salad dressing, stirring well. Chill at least 8 hours. Spoon rice into individual lettuce lined plates. Spoon bean mixture over rice. Top with cheese, green onions, tomatoes and if desired, sour cream.
