ORANGE WALNUT CHICKEN 
Chicken breasts (skin removed)
Curry powder (to taste)
1 tsp. grated orange peel
1 c. pineapple tidbits, undrained
1/3 c. broken walnuts
1/4 tsp. cinnamon
2 tbsp. water
Salt & pepper
1/3 c. melted butter
3/4 c. orange juice (frozen, slightly diluted)
1/3 c. raisins
1 tbsp. flour
1 tsp. soy sauce

Rub salt, pepper and curry into chicken. Dip pieces in melted butter. Place in shallow pan. Bake at 400 degrees for 10 minutes then turn and bake 10 minutes longer.

Meanwhile, heat to boiling the peel, juice, pineapple, nuts, raisins and cinnamon. Pour this hot mixture over chicken and reduce oven to 350 degrees. Bake 30 to 40 minutes or until done. Baste occasionally. Remove chicken to platter. Pour sauce into a pan and add flour, water, soy sauce, stirring briskly. Pour over chicken and serve. Good with wild rice or rice pilaf.
