APPLE OR RHUBARB CRUNCH | |
2 c. flour 1 c. rolled oats 1 1/2 c. brown sugar 1/4 tsp. salt 1 c. butter 6 c. diced apples or rhubarb 1 tsp. cinnamon 1 c. sugar (+1/2 c. for rhubarb) 3 tbsp. cornstarch (add 1 tbsp. for rhubarb) 1/2 c. water 1 tsp. vanilla 1. Preheat oven to 400 degrees. Grease 11 x 7 x 1 1/2 inch pan. 2. In mixing bowl combine flour, oats, brown sugar and salt. Cut in butter until mixture resembles crumbs. Reserve 1 cup crumbs. Press remaining crumbs in pan. 3. Arrange apples on crumbs. 4. In small saucepan combine cinnamon, sugar and cornstarch. Add water, cook over medium heat, stirring constantly, until thickened and clear. Remove from heat; stir in vanilla. Pour on apples. Sprinkle with reserved crumbs. 5. Bake in preheated oven for 10 minutes. Reduce to 325 degrees and cook for 40 minutes. |
