1/2 c. butter
1 1/2 c. sugar
1 lg. egg
1 c. sour cream or 1 c. buttermilk
1 tsp. baking soda
2 c. flour
1/8 tsp. salt
3/4 tsp. cinnamon
2 c. rhubarb (cut up)

Cream sugar and shortening. Add beaten egg and sour cream. Sift salt, baking soda and cinnamon with the flour and add. Mix well. Then add cut up rhubarb. Bake in a loaf or tube pan at 350 for 35 minutes.

Before baking make a mixture of 1/3 cup sugar and 1 teaspoon cinnamon and sprinkle on top. Very good served with a whipped topping.
