POTATO PIE 
6 eggs (can use egg substitute)
1/2 tsp. onion powder
1/2 tsp. thyme leaves
1/4 tsp. salt
1/8 tsp. pepper
3 c. frozen hash brown potatoes
4 oz. (1 c.) shredded Swiss cheese
1/2 c. diced ham
1/2 c. chopped green pepper
1 tomato, thinly sliced

Heat oven to 350 degrees. Generously grease 9" pie pan. In medium bowl combine eggs, onion powder, thyme, salt and pepper. Beat well. Stir in potatoes, cheese, ham and green pepper, pour into prepared pan. Bake at 350 degrees for 40 to 45 minutes or until set. Garnish with tomatoes. Serve with fresh fruit. 6 servings.
