PORK CHOPS WITH APPLES AND
ONIONS
 
4 center-cut rib pork chops (1 1/2 lbs. well trimmed; reserve 1 lg. piece of fat)
Salt and pepper to taste
1 lg. onion, cut in 8 slices
1/4 c. vegetable or beef broth
1 med. apple, cored and cut in 4 rings

Grease hot skillet with pork fat. Brown chops on both sides. Season with salt and pepper. Place 2 onion slices on each chop. Add broth. Cover tightly and simmer 20 minutes. (If dry, add water as needed.) Place apple ring on each chop. Cover and cook 10 minutes longer or until chops are tender. Makes 4 servings. Substitute chicken for beef, lamb or pork.
