MEDITERRANEAN FISH (MICROWAVE) 
1 med. sliced onion
2 tbsp. olive oil
1 clove garlic, crushed
1 can Italian stewed tomatoes
4 tsp. med. green chili salsa
1/4 tsp. cinnamon
1 1/2 lb. firm fish (halibut, red snapper, sea bass or cod)
12 stuffed green olives, halved

In 1 1/2 quart dish, add onions, oil and garlic. Cover. Cook on high for 3 minutes.

Add tomatoes, salsa, and cinnamon. Top with fish and olives. Cook on high 3-4 minutes until fish flakes with fork. A 1/2 cup grated Jack or Cheddar cheese, if desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
