FROZEN CHOCOLATE DESSERT | |
2 c. powdered sugar (confectioners') 1 c. softened sweet butter (2 cubes) 4 squares unsweetened or semi sweet Baker's chocolate 3 egg yolks 3 egg whites 32 vanilla wafers (1/2 box) 1 tbsp. vanilla extract 1 1/2 c. walnuts or pecans, chopped In an electric mixer, blend sugar and butter. Melt chocolate squares on low heat in a saucepan, then add to the sugar and butter mixture. Add egg yolks and vanilla. Add chopped walnuts or pecans to mixture. After mixing thoroughly, fold in egg whites with a spoon. Crush vanilla wafers on a sheet of waxed paper using a rolling pin. Spread 2/3 of the wafers evenly on the bottom of a rectangular or round glass Pyrex baking dish. Put remaining wafers aside. Carefully spoon chocolate mixture on top of the wafers in the dish. Spread evenly and then sprinkle remaining wafers on top. Cover with waxed paper and freeze for 2 hours. Cut and serve. Serves 12. |
