2 lbs. fillet white fish Vegetable oil 1 lg. tomato, diced 1 med. onion, diced 1 c. celery, diced 2 cloves garlic, minced Parsley sprigs 1 tbsp. curry powder 1 tbsp. white vinegar 1/2-1 tsp. salt (to taste) 1/8-1/4 tsp. pepper (to taste) 2 tbsp. lemon juice Rub fish with oil. Place in a 9"x13" baking dish. Mix tomato, onion, celery, garlic, curry, vinegar, salt, and pepper. Spoon this mixture over fish. Bake at 350 degrees for 30 to 40 minutes or until fish is flaky. Sprinkle with lemon juice. Garnish with parsley. |
