FISH - FRENCH STYLE | |
2 tbsp. butter 2 med. onions, finely chopped 4 apples, peeled, cored & sliced 2 c. apple cider 2 tsp. cider vinegar 1/2 tsp. salt 1/2 tsp. pepper 6 white-fleshed fish fillets, about 2 lbs. Preheat oven to 400 degrees. Melt butter in large skillet. Add onions and saute just until soft. Add apples, apple cider, vinegar, salt and pepper. Cook until warmed through 1 to 2 minutes. Arrange fillets in single layer in 9 x 13 inch baking dish. Pour apple mixture over fillets. Cover with foil and bake 12 to 15 minutes depending on the thickness of fish or until it flakes easily with fork. Serve with rice or pasta. |
