MICROWAVE FISH 
1 c. water
1 bay leaf
1 tbsp. lemon juice
1 lb. fillet of sole (could use scallops)
2 tbsp. white wine
2 tsp. lemon juice
Garlic powder, parsley, salt, Parmesan cheese

Arrange fish with above ingredients in a 12" x 7 1/2" x 2" baking dish. Micro cook fish covered with vented plastic wrap on High (100% power) for 3 to 4 minutes or until fish flakes easily when tested with a fork. Remove fish with slotted spatula. Discard liquid. Return fish to baking dish. Pour the wine and lemon juice over all. Sprinkle with rest of the above ingredients. Cook, uncovered for 1 minute more.

Since microwave ovens vary in power, you may need to adjust your cooking time.
