GLAZED CARROT COINS 
1/4 c. water
1/4 tsp. salt
3 - 4 carrots, sliced thinly
1/2 tbsp. butter
1/3 c. brown sugar
1 tbsp. grated lemon rind

Combine water, salt and carrots in 1 quart casserole; cover tightly with plastic wrap. Microwave 5 minutes on High or until carrots are tender. Stir in butter, sugar, lemon rinds. Cover, microwave 4 minutes on High or until hot and glazed. Some microwaves may vary.

Since microwave ovens vary in power, you may need to adjust your cooking time.
