BROCCOLI-SWISS CHEESE CASSEROLE | |
24 oz. cream style cottage cheese 3 eggs 1/3 c. flour 1/4 c. + 2 tbsp. melted butter 4 c. chopped cooked broccoli 2 c. shredded Swiss cheese 4 drops hot sauce 1 can whole kernel corn, drained 1/4 c. minced onion 1/2 tsp. salt 1/4 tsp. pepper 1/3 c. bread crumbs 1/2 c. cooked, crumbled bacon Combine cottage cheese, eggs, 1/4 cup butter and flour in blender. Process until smooth. Set aside. Combine next 7 ingredients and stir in cottage cheese mixture. Pour into greased, shallow 2 quart casserole. Saute bread crumbs in 2 tablespoons butter. Add bacon and sprinkle over top of casserole. Bake at 350 degrees for 45 minutes. Yield: 8 to 10 servings. |
