SPINACH PASTA AND SHRIMP
CASSEROLE
 
7 oz. spinach noodles, cooked and drained
2 c. shrimp, peeled and deveined
2 eggs, beaten
1/2 c. milk
1 clove garlic, crushed
1 tsp. oregano
1 tsp. basil
1/2 tsp. salt
Pepper, as desired
1 c. shredded Mozzarella cheese
3/4 c. grated Parmesan cheese

In a greased 2 1/2 quart baking dish, spread noodles. Put shrimp on top of noodles. Mix together eggs, milk, garlic, oregano, basil, salt, pepper, and Mozzarella cheese. Pour mixture over shrimp and noodles and mix together. Sprinkle with Parmesan cheese and drizzle melted butter on top. Bake at 350 degrees for 25 minutes. Serves 4.
