SPINACH SHRIMP SALAD 
1/4 c. mayonnaise
2 tbsp. vegetable oil
2 tbsp. olive oil
2 tbsp. tarragon vinegar
2 tbsp. Dijon style mustard
Salt and pepper to taste
2 lb. fresh spinach, remove stem ends; clean
8 slices bacon, cooked and crumbled
10 fresh mushrooms, sliced thin
1 lb. diced or small shrimp, cooked
2 c. croutons

Mix first 6 ingredients. Cover and refrigerate until needed. In large bowl, mix rest of ingredients. When ready to serve, add dressing and toss well. Serves 10.
