ERNIE'S EASY VEGETABLE SOUP 
2 lg. cans V-8 vegetable juice
1-2 lb. ground beef, optional
2 onions
2-3 carrots
2-3 stalks celery
2 turnips
2-3 white potatoes
Other vegetables, rice or noodles as desired or 2 lg. bags frozen mixed vegetables

Brown ground beef and drain fat. Heat V-8 juice to boiling. Dice vegetables and add to hot juice. Simmer, stirring occasionally, for 2-3 hours.
