COOL STRAWBERRY CHIFFON 
1 1/2 c. fresh or frozen strawberries, thawed
1 env. unflavored gelatin
1/2 c. cold water
1/2 c. orange juice
2 tbsp. sugar
1 tbsp. rum
1 tsp. vanilla extract
2 egg whites

Puree strawberries in blender or food processor; set aside.

In a small saucepan, sprinkle gelatin over cold water, set aside about 5 minutes or until gelatin softens. Dissolve gelatin over low heat approximately 5 minutes, stirring constantly; pour into large bowl. Cool about 5 minutes; beat in orange juice, sugar, rum, vanilla extract and pureed strawberries. Cover and refrigerate about 1 hour, or until mixture mounds slightly when dropped from a spoon.

In a medium bowl, beat eggs with mixer at high speed until stiff peaks form. Gently fold into gelatin mixture; spoon into parfait glasses. Refrigerate until firm. Serves 4.
