CATSKINNER CAKE 
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
Salt
3 eggs
3/4 c. oil
3/4 c. buttermilk
2 c. sugar
2 tsp. vanilla
1 sm. can crushed pineapple
2 c. grated carrots
1/2 c. chopped nuts
1/2 c. coconut

Sift first 4 ingredients into a bowl. In another bowl mix well the next 5 ingredients. Add dry ingredients; mix well. Then add the last 4 ingredients. Bake in oblong pan at 350 degrees for 55-60 minutes.

FROSTING:

1 c. sugar
1/2 c. butter
1/2 c. buttermilk
1/4 tsp. baking soda

Fix just before cake is done. Just heat and stir until blended. Pour over hot cake, working into cake with back of large spoon. Let dribble down sides. This is very thin frosting.
