WHITE CHOCOLATE CAKE 
2 1/2 c. white cake flour
1/4 lb. white chocolate, melted over hot water and slightly cooled
1 c. butter
2 c. sugar
4 eggs
1/4 tsp. salt
1 tsp. baking powder
1 c. buttermilk
1 c. chopped pecans
1 c. flaked coconut
1 tsp. vanilla

Cream together the butter and sugar until light. Add melted chocolate, then the eggs one at a time, beating well after each addition. Sift the flour with the salt and baking powder, then add to batter alternately with buttermilk, beating well as you go. Fold in the vanilla, pecans and coconut.

Pour it into two greased and floured 9 inch layer pans and bake at 350 degrees for 45 minutes or bake in a large 9 or 10 inch tube pan for about 75 minutes. (I like the layers better.) Cool before frosting.
