CHEESE FILLED CUPCAKES 
1 (3 oz.) pkg. cream cheese, softened
1/4 c. sugar
2 tbsp. chopped nuts
1/2 tsp. vanilla
2/3 c. flour
1/4 c. unsweetened cocoa
1 tsp. baking powder
1/2 c. sugar
1/4 c. butter
1 egg
1/2 tsp. vanilla
1/2 c. milk

Preheat oven to 375 degrees. Put 12 paper bake cups into muffin pans. In a small bowl, combine the cream cheese, 1/4 cup sugar, nuts, and 1/2 teaspoon vanilla. In a medium bowl, cream the 1/2 cup sugar and butter until fluffy. Stir egg and vanilla; mix well. Mix together flour, cocoa, and baking powder; add to rest of ingredients alternately with the milk. Beat 2 minutes or until smooth. Spoon about 1 tablespoon of batter into each bake cup, then spoon 1 teaspoon of cream cheese, nut mixture to each. Finish filling with the batter. Bake 20 minutes. Makes 12 cupcakes. Frost, if desired.
