ORANGE NUT BREAD
1 c. sugar
1 c. raisins or dates
1 tsp. vanilla
1 heaping tbsp. Spry
Grate rind of 1 lg. orange (every last bit!)
1 beaten egg
2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped nuts

Squeeze orange juice and add enough boiling water to make a cup liquid; add 1 teaspoon baking soda. Place orange rind, raisins, orange juice mixture, shortening, sugar, and vanilla (all in a large bowl). Add all at once beaten egg, flour, baking powder, and salt; beat thoroughly. Stir in nuts. Grease a pound coffee can; place mixture 2/3 full and bake for 1 hour or more at 350 degrees. Can also be made in loaf pans. Coffee can gives a nice appearance. Cut bottom of can after baking, if difficult to remove.
